Stage 1 - Mixing, kneading and first rise (Puntatura)

The basic process for making our dough is to first mix the ingredients (use the basic Neapolitan dough recipe) in this precise order:


  • Add all the water to a bowl,

  • Add all the salt to the bowl and stir well,

  • Add 10% of the flour to the bowl and stir well,

  • Add the yeast to the bowl and stir well,

  • Add the remaining flour to the bowl and bring everything together - it will be quite 'shaggy'

  • Knead for 15 minutes

  • Rest for 10 minutes

  • Stretch and fold the dough

  • Rest for 10 minutes

Having brought all the ingredients together (it will be quite a shaggy texture) we then begin the hard (but rewarding) effort of kneading.



We knead the dough for 15 minutes until it is elastic and shiny, form it into a nice taut ball, and leave for 10 minutes to rest.




After resting we fold the dough (book style) three more times and then leave to rest for a further 10 minutes.


After the dough has rested for 10 minutes we will then be ready to go to the next stage (Stagioli) where we will shape the dough into panetti!
