In this, the third of a three part series, Enzo Esposito of AVPN shows how to manage the pizza while it is in the oven.
The video is in Italian but quite self-explanatory. A couple of things I will point out:
Wherever you first place the pizza in the oven, that is exact spot you should replace the pizza after you have turned it - the reason is that anywhere else in the oven will be much hotter and you will risk burning the base
Use the turning peel to check on the pizza and rotate it during the cook - which will be about 90 to 120 seconds
Eat while hot!
